From the mountainous region of Vale de Grama in Sao Sebastiao comes Fazenda Recreio, our newest offering. The Dias family have owned the family farm for 135 years, and bring a unique, innovative spin to the growing and harvesting of their coffee.
The coffee begins to be harvested by hand when the fruits ripen in mid-May, before being washed, sorted, and pulped. It is then placed on a patio to air dry until moisture levels reach 20%, after which it is moved to mechanical dryers to assure a steady 11% moisture content. The coffee spends at least 15 days in bins in order to homogenise before the drying process.
The Dias family is committed to environmental responsibility and preservation, with parts of the farm sectioned off for this purpose. As well as this, programs are in place to reclaim their springs, streams, and riverbanks. All workers (and their families!) are educated on missions of conservation and sustainability.
The farm prioritises its people as well as its land; there are 68 houses on the property for full-time workers and their families, as well as a football field, church, clinic, and computer lab.
