This is a Regional Select coffee from Siltepec, in the high altitudes of the Sierra Madra mountains, in the centre of Mexico's best coffee producing region Chiapas, which borders Guatemala to the south. The Regional Select program allows for various smallholders to sell coffees that score 83-85 points that wouldn't be sold as single farm coffees and prevent them being sold on the commercial market.
The microclimate in this region creates a cloud forest, due to the Soconuscu rainforest zone around the Novillero River. The weather is humid with lots of shade, cool conditions at night and excellent soil, which together create a perfect environment for the development of specialty coffee.
This coffee is a wonderful espresso very sweet and clean, with soft citric acidty and toffee and hazelnut flavours.
