Last year we purchased coffee from Yolanda and the neighbouring farms in the area of Las Pacayas. After working with that coffee we instantly knew we wanted to try more from these producers and this lot did not disappoint.
Yolanda and her family owns 2 hectares of land and most of it is native forest and shaded trees. Yolanda believes that the key to the quality of her coffee is for the trees to grow in synergy with the rest of the environment.
Yolanda, her husband and three sons runs the farm according to biodynamic principles and biodiversity is central to their approach. They have a variety of fruit trees and native trees that attracts all types of wildlife and they also grow vegetables and raise cows on the farm.
All coffees are dried on raised beds in the Aruco facility in Corquin.
The hard work really shows up in the cup quality. This is a beautifully processed natural Lempira with lots of tropical fruit and milk chocolate with a very sweet and creamy mouthfeel.
