This Small Holders group is a collaboration with our partners in Huehuetenango. David and his Dad work with a network of over 300 small holder farmers in the region. They provide agronomers and identify community leaders to show their neighbours how to grow coffee. It takes a lot of organisation, patience and skill to reach so many people. There are many challenges. Each lot is cupped by their Q grader and each blend or collaboration is driven on flavour profile. Each coffee grower processes their own coffee, and it is delivered to us in parchment. The coffees in this collaboration are all washed. Each coffee grower picks, processes and maintains their own farm. Each farm benefits from its own wet mill. The fermentation period runs for about 24 hours, however is adjusted depending on climate. The coffees are dried on their respective patios for 7-10 days during sunny periods. Once the coffee is dried, our partners receive parchment samples and the lots are cupped.
